COSHH Regulations – Christmas Season Food Hygiene

COSHH Guidelines on Food Hygiene

In 2015 approx. 10 million turkeys were consumed in the UK over the Christmas period.

If you are a commercial kitchen adding turkey dinners to your Christmas menus, there are some basic hygiene rules you need to be aware of according to the Control of Substances Hazardous to Health (COSHH) Regulations.

The most common microorganisms contributing to foodborne illnesses associated with turkey are:

  • Campylobacter jejuni
  • Clostridium perfringens
  • Escherichia coli O157:H7 (E. coli)
  • Listeria monocytogenes
  • Salmonella
  • Shigella
  • Staphyloccocus aureus.

For commercial businesses tackling the issue of employee infections arising from the pathogens above, alongside the COSHH regulations you also need to take note of food safety, environmental protection and public health regulations.

Canopy Fan Cleaning is compliant with the COSHH regulations.

In addition Canopy Fan Cleaning are:

  • Contractors Health & Safety Assessment Scheme (CHAS) accredited
  • Fire Protection Association (FPA) Registered Member,
  • Food Safety Act Compliant
  • Building Engineering Services Association (BESA) members.

COSHH Risk Assessment

The COSHH guidelines on the risk of infection at work cover:

  • identifying the hazards;
  • assessing the risks;
  • controlling the risks.

The two recommended COSHH approaches to controlling infection caused by pathogens such as the bacteria listed above are:

  • The principles of good occupational hygiene – e.g. washing hands, covering cuts, protective clothing, waste disposal
  • The principles of good environmental hygiene and design – e.g. clean work surfaces and equipment regularly and use equipment that is easy to clean and decontaminate, ensure ventilation systems are safe, clean and easy to decontaminate

Canopy Fan Cleaning’s professional kitchen deep cleaning service and ventilation ductwork cleaning services are COSHH compliant in that they thoroughly and safely clean all kitchen equipment surfaces to a high hygienically clean standard.
