What types of fans and ducting are used in Commercial Kitchens?
Types of Exhaust Fans for Commercial Kitchens
- Roof-Mounted: these kitchen fans are used where there is increased pressure losses. The inlet and outlet for roof mounted fans are 90 degrees from each other.
- Up-Blast: Perhaps the most common type of fan used today, they are made of aluminium and are placed on the roof, directly on top of the final ducting exhaust.
- Inline: When it’s difficult to mount an outdoor fan, inline fans can be used within interior ducts.
Air Movement
Each fan will move air by using a propeller, or a blower. Propellers are common, but they tend to gather grease on the blades.
Blowers have blades that adapt by moving forward or backwards, and can deal with heat and pressure better than propellers.
Direct Drive fans are the most intelligent types of fan- they have sensors for smoke and heat, automatically speeding up the airflow when things get messy on the hob.
Ducting Requirements
To deal with the heat of a commercial kitchen, the ducting must be made of 16 or 18 gauge stainless steel, and be enclosed in a fire-resistant shaft.
